½ tsp ground ginger
½ tsp cayenne pepper
1 tsp mild chilli powder
340 g (12 oz) basmati white rice
900 ml (1½ pints) hot vegetable stock
1 can chopped tomatoes, about 225 g
3 tbsp coarsely chopped parsley
100 g (3½ oz) peeled large raw prawns
200 g (7 oz) skinned salmon fillet, cut into 2.5 cm (1 in) cubes
dash of Tabasco sauce (optional)
salt and pepper

Method
  • Heat the oil in a large, wide pan over a moderately high heat. Add the onion and cook, stirring, for about 3 minutes. Add the celery, green or red pepper, garlic, ginger, cayenne, chilli powder and rice, and cook, stirring, for 2 minutes.

  • Add the Tabasco sauce, if using, and salt and pepper to taste. Sprinkle with the remaining 1 tbsp parsley and serve hot.

Some more ideas:
Use brown rice instead of white. It will take 30–40 minutes to cook and will need about 150 ml (5 fl oz) more stock.
* For a pork and smoked sausage jambalaya, cut 200 g (7 oz) pork fillet (tenderloin) into thin strips and brown in 1 tbsp olive oil, then remove from the pan and set aside.
Add 1 chopped red onion to the pan and cook for 5 more minutes, or until almost soft. Stir in the rice and cook for 2–3 minutes, then pour in 750 ml (1¼ pints) vegetable stock.
Cover and simmer for 10 minutes. Stir in 1 can tomatoes with added peppers and basil, about 400 g, with the juice, and 200 g (7 oz) sliced courgettes. Cover and cook for a further 5 minutes.
Return the pork to the pan together with 115 g (4 oz) sliced smoked sausage and cook, covered, for 5 more minutes or until all the liquid has been absorbed and the rice is tender. Serve sprinkled with 2 tbsp chopped parsley.

Garnishing Ideas For Soups

Soups usually fall into one of three categories:
  • Smooth
  • Chunky
  • Clear Broths

Chunky soups and clear broths often don't need garnishing other than perhaps a scattering of herbs, as the ingredients within them are usually decorative enough.  The beauty of clear broths is that all the pieces of meat, seafood or vegetables within the soup are clearly visible.

On the other hand, smooth soups are a blank, flat canvas. They have so little variety in texture, colour and shape that they need something to give them a lift.
One way to add some texture to a smooth soup is to turn it into a sort of deconstructed chunky soup.

The 'chunks' in this case are pieces of roast pumpkin and spicy chorizo and they are simply piled into the centre of the soup.  It breaks up the monotony of the flat surface by creating some height in the centre of the bowl and adds contrasting shapes.  You could also choose contrasting colours too.  The different flavours and textures also make the soup more interesting to eat.

A simple idea for a garnish is a swirl of yoghurt or as in the above recipe, a dairy free courgette cream, just drizzled over the surface of the soup then it is just finished off with a sprig of mint for extra vibrancy. A contrasting colour works best for this technique.

Another way of creating height and adding texture is to garnish with mini dumplings which don't have to be unhealthy. These ones are made using grated pumpkin. They not only add height but contrasting colour, texture and flavour too. And of course you can't really go wrong with a sprig of fresh herbs to add that final touch.

Some other ideas for garnishes include:
  • Chopped herbs
  • Sprigs or leaves of fresh herbs
  • Vegetable ribbons
  • A medley of diced vegetables
  • Chiffonade of greens - tightly roll spinach, cabbage, chard or kale leaves and slice across the roll to form thin strips
  • Ground or cracked spices
  • Savoury scones
  • Mini meatballs
  • Slices of sausage or crispy bacon
  • Baked wholemeal bread croutons

The main thing to remember is to add something that will break up the surface of the soup, so a different color  texture or shape will all help to make your soup look more enticing.

Benefits of Bitter Gourd

Dosai/Idli Useful Tips

  • When you grind the idly batter, the rice should be ground to a fine sooji rava consistency and not to a fine paste- gives a grainy texture hence prevents the idli from hardening. Urad dal batter should be really smooth and fluffy- it helps the idlis puff up.
  • Fermentation is an important factor. A perfectly fermented batter yields softer the idlis and tastier the dosas.
  • Use a well seasoned griddle for dosas to prevent sticking.
  • If you are going to eat dosas hot and fresh, make thin crisp dosas. Be liberal with oil.If you are going to take it in your lunch box, make soft white dosas. Do not allow it to be crisp. Use less oil. Remember, for soft dosas, it is best to use only raw rice. Add parboiled rice or idly rice spoils the texture.
  • Always remember, idly batter is thick, dosa batter is a little thin and oothapam batter is thinner. If you dilute your idly batter too much, you have hard idlis which are not fluffy. Even if you use a common batter, change the consistency accordingly by adding water and mixing it well.
  • To aid fermentation in cold countries, preheat your oven to 200F and put it off. Place the vessel containing the batter on a plate (to collect the overflown batter in case it pours out) and keep oven closed overnight.
  • You can add a ladleful of old dosa/idli batter to the fresh batter to aid quick fermentation.
  • In countries/states where you don't get idli rice or boiled rice, here is a useful tip to convert your raw rice (any variety) into idli rice.
  • You can use idli rava instead of grinding rice. Just grind the urad batter and mix with idli rava! However, the idlis will be like the udupi style ones, not like the smooth chettinadu style idlis.

Healthy Food Ingredients

Ayurveda suggests you include all tastes — sweet, sour, salty, pungent, bitter and astringent — in at least one meal each day, to help balance unnatural cravings. Here are 12 foods that can help you lose weight and gain health:

Turmeric: Cur cumin, the active component of turmeric, is an object of research owing to its properties that suggest they may help to turn off certain genes that cause scarring and enlargement of the heart. Regular intake may help reduce low-density lipoprotein (LDL) or bad cholesterol and high blood pressure, increase blood circulation and prevent blood clotting, helping to prevent heart attack.

Cardamom: This is a thermogenic herb that increases metabolism and helps burn body fat. Cardamom is considered one of the best digestive aids and is believed to soothe the digestive system and help the body process other foods more efficiently.

Chillies: Foods containing chillies are said to be as foods that burn fat. Chillies contain capsaicin that helps in increasing the metabolism. Capsaicin is a thermogenic food, so it causes the body to burn calories for 20 minutes after you eat the chillies.

Curry leaves: Incorporating curry leaves into your daily diet can help you lose weight. These leaves flush out fat and toxins, reducing fat deposits that are stored in the body, as well as reducing bad cholesterol levels. If you are overweight, incorporate eight to 10 curry leaves into your diet daily. Chop them finely and mix them into a drink, or sprinkle them over a meal.

Garlic: An effective fat-burning food, garlic contains the sulphur compound allicin which has anti-bacterial effects and helps reduce cholesterol and unhealthy fats.

Mustard oil: This has low saturated fat compared to other cooking oils. It has fatty acid, oleic acid, erucic acid and linoleic acid. It contains antioxidants, essential vitamins and reduces cholesterol, which is good for the heart.

Cabbage: Raw or cooked cabbage inhibits the conversion of sugar and other carbohydrates into fat. Hence, it is of great value in weight reduction.

Moong dal: The bean sprouts are rich in Vitamin A, B, C and E and many minerals, such as calcium, iron and potassium. It is recommended as a food replacement in many slimming programmes, as it has a very low fat content. It is a rich source of protein and fibre, which helps lower blood cholesterol level. The high fibre content yields complex carbohydrates, which aid digestion, are effective in stabilising blood sugar and prevent its rapid rise after meal consumption.

Honey: It is a home remedy for obesity. It mobilises the extra fat deposits in the body allowing it to be utilised as energy for normal functions. One should start with about 10 grams or a tablespoon, taken with hot water early in the morning.

Buttermilk: It is the somewhat sour, residual fluid that is left after butter is churned. The probiotic food contains just 2.2 grams of fat and about 99 calories, as compared to whole milk that contains 8.9 grams fat and 157 calories. Regular intake provides the body with all essential nutrients and does not add fats and calories to the body. It is thus helpful in weight loss.

Millets: Fibre-rich foods such as millets - jowar, bajra, ragi, etc - absorb cholesterol and help increase the secretion of the bile that emulsifies fats.
Cinnamon and cloves: Used extensively in Indian cooking, the spices have been found to improve the function of insulin and to lower glucose, total cholesterol, LDL and triglycerides in people with type 2 diabetes.

Salt
Chilli/Cumin Powder: as per taste

Baleela and Fule

Baleela
Ingredients
2 cups of good quality chickpeas (dried or canned)
2-3 large onions, sliced into rings
1 cup of tomato sauce OR 3 tbsp of tomato paste
1 tbsp of cumin
1/2 tbsp of ginger
1/2 tbsp of black pepper
1/4 tsp of turmeric
1/4 tsp of paprika (optional)
hot pepper flakes or hot chili powder to taste (optional)
salt to taste

Method
  • If using dried chickpeas, soak them in water overnight, or give them a Quick Soak: Put the chickpeas in a pot and cover with about two inches of water. Let boil for 5 minutes, then turn off the heat, cover, and let the peas soak for an hour to an hour and a half. They should be slightly tender by now. Add half a cup of water and simmer, covered, on medium heat for about 20 minutes or until chickpeas are cooked and tender. Proceed with recipe.
  • If using canned chickpeas, drain the liquid off of them, rinse, then put in a pot and cover with about two inches of water. Cover and let simmer on medium heat for about 20 minutes. Proceed with recipe.
  • To the pot of chickpeas and water, add the rest of the ingredients. Simmer, covered, on low heat for 20 minutes.
  • Serve in bowls, with plenty of the broth! Squeeze fresh lemon on it right before eating.
Fule
Ingredients
2 cups of good quality dried fava beans (they’re usually quite large, but the variety I found here at my Middle Eastern store were really tiny, as you can see in the picture)
2 onions, chopped
1.5 tbsp of cumin
1/2 tbsp of black pepper
hot pepper flakes or hot chili powder to taste (optional)
salt to taste

Method
  • Soak the beans overnight or using the Quick Soak Method described above for the chickpeas.
  • To the pot of fava beans and water, add the rest of the ingredients. Let simmer, covered, on low heat for 20-30 minutes. The skins of the beans should start to crack open; this is a sign that they’re ready.
  • Fule is usually served steaming hot and without the broth. People sprinkle salt, extra cumin, and a squeeze of lemon onto their individual servings.

1 small shallot , finely chopped
1 tsp cumin seeds
1 tsp fennel seeds
1 inch cinnamon stick
grated zest and juice of one lemon

  • Cook the lentils in about 2-3 cups of water. Bring the water to a boil and then simmer for about 15-20 minutes.
  • Cooked but with a bite in it still.
  • Meanwhile heat about 2 tsp of oil or butter in a skillet. Once hot add the sliced onions to it and cook until browned and caramelized. This takes about 10 minutes. Remove from the pan and set aside.

  • Add the rice and cinnamon stick and cook until the rice is aromatic and toasted.
  • Add 2 cups of water, cover and cook rice – about 10-15 minutes.
  • When the rice has absorbed all the liquid and is almost cooked, add the cooked lentils, zest and juice of lemon to this mixture.
  • Cook for another 3-4 minutes for the rice to absorb the flavors of the lentils.
  • Serve with caramelized onions and garnished with cilantro.

  • In the meantime, mix the Tahina with the lemon juice until it becomes a smooth light consistent paste.
  • Allow to cool the egg plant, then peel off the skin and take the soft flesh and make sure you don’t take any of the skin. Slightly roast the garlic also in a skillet for few minutes and make a paste.
  • Then add all the ingredients in a blender or use a hand mixer to blend well to get a uniform consistency. Add salt and olive oil to taste.
  • Enjoy the Eggplant dip with Grilled meats &Arabic breads. You can even use the same as a spread in your sandwiches, chapatti’s etc.
